I love this pahari chicken kabab . Pahari chicken kabab pieces are marinated in an herbal paste made from coriander leaves, green chillies, ginger garlic paste, yoghurt and lemon juice for 2hours,then pan fried or grilled, lightly brushed with ghee serving.Its main characteristic is it's bright green colour and fresh herbal favour.

Blend coriander leaves, ginger garlic paste, green chillies, lemon juice, yoghurt, salt,red chilli powder, mustard oil, chopped onion, turmeric powder,red chilli powder together in a blender to make a paste.

Coat the chicken pieces gram flour well with this paste.Marinate in the refrigerator for at least 15minutes (longer if possible)pan fry-heat a little ghee in a pan and fry the chicken pieces over medium heat for5-7 minutes, until cooked through.The reduce the heat and cook for a little longer.You can also cook on the grill or in the oven, until the chicken is tender and cooked through and lightly charred on the outside.Serve the boiled and fried kababs on skewers or directly.

Spread ghee or lemon juice on top. Chicken pahadi kabab is ready.Serve with coriander chutney.
