Not sure what to call this. It's kind of a cross between a tikka masala and a coconut curry recipe. I just know it hit all of the flavor notes I was craving. Rich and spicy. If you like it hotter, increase the cayenne or the Serrano peppers.

Ingredients

1 hour cook, 3 hour marinade
4 servings
  • For the marinade
  • 3/4 cupplain yogurt
  • 1 tbsfresh ginger root, minced
  • 6 clovesgarlic, minced
  • 1 tspeach; garam masala, turmeric, cumin, smoked paprika, kosher salt
  • 1 1/2 lbschicken breast, cut into strips or bite sized pieces
  • For the curry sauce
  • 3 tbsbutter, divided
  • 1large onion, chopped
  • 1red or orange bell pepper, chopped
  • 1large Serrano pepper, seeded and minced
  • 4 clovesgarlic, minced
  • 1 tbsfresh ginger root, minced
  • 2 tbsolive oil
  • 1 1/4 cupschopped tomato
  • 1/4 cupwater
  • 1 tspeach; garam masala, cumin, turmeric, smoked paprika, curry powder, regular paprika, and brown sugar
  • 2 tspgranulated chicken bouillon
  • 1/2 tspcayenne pepper
  • 1 (14 oz)can tomato sauce
  • 1 (14 oz)can coconut milk
  • 1lemon, divided
  • 1 cupchopped cilantro
  • For the rice
  • 2 cupsbasmati rice
  • 4 cupswater
  • 2 tbsbutter
  • 2 tspkosher salt

Steps

1 hour cook, 3 hour marinade
  1. 1

    Mix all marinade ingredients with chicken in a large mixing bowl. Mix well. Cover and marinade in the refrigerator for 3 hours or up to overnight if you can.

    Rinse the dry rice. Place in a pot with rest of rice ingredients. Cover and heat on medium low heat until it comes to a simmer. Reduce heat to low. Simmer until most of the liquid is absorbed. Turn off heat and let pot sit on hot burner to finish until ready to serve.

    Using a large deep frying pan or large Dutch oven, melt 2 tbs butter. Add onions and both peppers. Saute until onions just start to brown. Add garlic and ginger. Saute 2 more minutes until ginger becomes aromatic. Remove to a plate and set aside.

    In the same pan, heat again and add oil. Remove chicken from the marinade into the pan. Do not remove any excess marinade. Do in batches if you don't have enough room. Cook the chicken 4 minutes per side. It won't really brown because of the marinade. Remove to a plate and set aside.

    Add tomatoes, 2 tbs of the left over marinade, and water to a blender. Puree until liquefied. Add back to the pan the chicken and veggies were cooked in. Add tomato sauce, coconut milk, and all seasonings. Bring to a simmer. Simmer 20 minutes or until sauce starts to thicken. Add back the chicken and veggies. Juice half the lemon, use the rest for garnish. Add lemon juice, 1/4 cup cilantro and remaining tbs butter. Simmer 5 minutes until heated through.

    Plate rice, top with curry and garnish with lemon wedge and remaining cilantro. Serve immediately. Enjoy.

Tips

Locally i don't have access to kashmiri chilli powder. If you can find it, that will replace the smoked paprika and cayenne.

cooking is a passion of mine. I started when I was very young and I had to drag a milk crate around to see over the counter. taught by a career cook (my grandmother ). I have always tried to push the boundaries of conventional cooking. I prefer cooking wild game. when I can get my hands on it, but fish is more readily available for me. I raise and butcher most of the livestock that I use for my conventional recipes. I hope everyone can find a few recipes they like in my list.
