Ugali, sukuma mixed with beef and avocado
I just love cooking
Steps
- 1
First, wash the meat thoroughly and cut it into small pieces.
- 2
Peel and crush or chop 2–4 cloves of garlic, depending on the amount of meat.
- 3
Add the garlic and ginger to the meat
- 4
Add a small amount of water, cover the pot, and let the meat boil over medium heat.
- 5
Stir occasionally and check whether the meat is becoming tender. Add more water if necessary.
- 6
Once the meat is tender, allow the remaining water to reduce. You can then add a little cooking oil and fry it until golden brown, if you prefer.
- 7
Add onions to the meat and cook until it turns to that golden brown
- 8
Add green pepper and tomatoes, then allow it to simmer for a while in a low heat
- 9
Add all the seasonings powder and salt to taste, mix all of them together
- 10
Add tomato paste and 3-4 tbsp of water to soothe the tomato paste and mix them and allow them to simmer together
- 11
Later, add your sukuma wiki and mix them well and simmer it for 5-7 minutes so as the sukuma wiki becomes tender and soft
- 12
Pour 700 ml of water into a pot and bring it to a boil.
- 13
Sprinkle in about 1 cup of maize flour first and stir. Gradually add more flour as you mix to prevent lumps.
- 14
Keep adding flour little by little while stirring and pressing the mixture against the sides of the pot until it becomes thick.
- 15
4. Cook untill ready
Reduce the heat and continue turning the ugali for about 5–8 minutes, until it is firm and cooked through. Shape it and serve hot. - 16
And don't forget your avocado to slice it and place it a side of your plate
Tips
Taste the beef and sukuma one last time before serving. Check the salt, seasoning, and tenderness of the beef. Serve the hot food immediately, with the avocado kept separate from the hot gravy.
