Ingredients

  • 1 Cupchicken grilled , cubed
  • 2 Cupswhite mushrooms , chopped
  • 1onion , finely chopped
  • 4 clovesgarlic , finely chopped
  • 1/8 Teaspooncayenne pepper
  • 2 Cupscream cheese
  • 1 Cupsour cream
  • 1/4 Cupcheddar cheese sharp
  • 1/4 Cupmonterey jack
  • 1/8 Cupcheese queso
  • 1/8 Cupasadero cheese
  • salt
  • oil

Steps

  1. 1

    Grill the chicken (marinated with ginger, garlic, lemon juice, pepper and salt) till well cooked and slightly browned. chop into bite size cubes, set aside.

    In a wok, heat the oil.

  3. 3

    Add the garlic and onion, and stir well till they turn translucent.

  4. 4

    Add the mushrooms and stir it around till it releases all of its juices.

  5. 5

    Add the cayenne pepper and cook till the liquids reduce.

  6. 6

    Add the cubed chicken pieces and stir well to combine.

  7. 7

    Add the cream cheese and sour cream, and break it up with your spatula till fully melted and evenly distributed.

  8. 8

    Next, add the four cheeses and mix well to combine.

  9. 9

    Check for seasoning, and add salt only if needed. (you may also add pepper if you so desire, but the cayenne makes it spicy enough).

  10. 10

    Take it off the heat and let it cool for about 10 minutes.

  11. 11

    Transfer to a serving dish and serve warm as an accompaniment to tortilla chips.

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours. We love entertaining friends, and our home is the usual watering hole in our gang. So we try to come up with some innovative, fun food. Hope u guys like them!
