Ingredients

  • 1Yellow Cucumber
  • 1 TeaspoonJaggery crushed
  • 1/2 TeaspoonTamarind Paste
  • 1Red Chilli
  • 3Green Chillies
  • 1/2 TeaspoonFenugreek seeds
  • 1 PinchAsafoetida ( hing)
  • Coriander leaves (or curry leaves)
  • 1Carrot Grated (optional)

Steps

  1. 1

    Peel the cucumber, cut and remove the seeds. (You can also grate it)

  2. 2

    Roast the fenugreek seeds and red chilli in a teaspoon of oil.

  3. 3

    Transfer the roasted ingredients into your blender.

  4. 4

    Add jaggery, green chillies, coriander leaves and tamarind paste for blending.

  5. 5

    Run your blender and mix the ingredients without water.

  6. 6

    Add the cut cucumber and blend it with the mixture.

  7. 7

    You can now add the grated carrot if you wish.

  8. 8

    Leave the mixture a bit coarse and transfer it to your serving dish.

  9. 9

    Prepare the tempering with mustard seeds, curry leaves and a pinch of hing, and add it to the mixture.

  10. 10

    Your chutney is ready!
