Ingredients

  1. 1 Cupginger , sliced
  2. 1 CupLime Juice
  3. 1 CupSugar

    Place the sugar and lime juice in a small non-stick saucepan, and mix to dissolve as much sugar as you can.

  2. 2

    Place the saucepan over medium heat, and keep stirring to dissolve the sugar.

  3. 3

    When the contents just begin to boil, add the sliced ginger and mix. increase the heat to high.

  4. 4

    Let the liquid reach a full rolling boil, for about 5 minutes.

  5. 5

    Reduce the heat to low, and let it simmer for another 10 minutes (stir occasionally).

  6. 6

    The liquid should have reduced to a thin syrup consistency. it should be thicker, but still pour-able and give off a strong ginger aroma.

  7. 7

    Take it off the heat and let it come to room temperature. this is the ginger-lime syrup base for the drink.

  8. 8

    Store the syrup in an air-tight glass jar, and keep it in the fridge. (will last about a month)

  9. 9

    To serve, ladle some of the syrup into a glass (the quantity depends on how strong you want the drink to be).

  10. 10

    Top it up with club soda or 7-up. enjoy!

    Note: you could decorate the rim of the glass with colored sugar, and garnish with a slice of lime or a sombrillo as shown in the pic.

Hey! I'm a super busy mommy to 3 year old mixed gender twins. I guess that's enough said about the amount of time i get to spend cooking :). Most of the food I cook is about saving time, but not compromising on flavour. My biggest supporter is my hubby, who loves trying out new recipes and experimenting with different flavours. We love entertaining friends, and our home is the usual watering hole in our gang. So we try to come up with some innovative, fun food. Hope u guys like them!
