This is very important, only set the stove to a medium heat, anything higher will destroy the eggs.

Set the butter to melt

Add the milk and the eggs together. I only made this with four eggs for two people but keep in mind that you add one tablespoon of milk per egg and think 2-3 eggs per person. Beat the eggs till they look like the picture. No need to over beat and do not add any spices to the eggs before they are cooked as this will not be beneficial for the texture. Then rock the pan to spread the butter.

This next step is also very important. Let the eggs sit in the pan for 45 seconds to a minute before considering touching them. This will deliver the fluffy consistency you want!

Use a rubber spatula to fold the eggs. Fold till everything looks fluffy and delicious. Do not over cook... These eggs should completely melt in the mouth and should not be chewy or hard at all. It should taste delicious without any seasoning, but if you wish for seasoning, it is best to add after plated.
