Brine the Turkey according to directions for less than 24 hrs.

Place brined Turkey in roasting pan

Pour half of the chicken broth over the Turkey

Finger underneath the Turkey Breast skin

Pour Olive Oil in and all over Turkey

Pour Basting Oil under the Turkey Breast skin and then pour the rest over the Turkey

Rub 2 Tablespoons of Brown Sugar under Turkey Breast skin

Sprinkle all dry herbs all over the Turkey and under the Turkey breast

Stick various fresh herbs underneath the turkey breast skin, under the wings, and the legs.

Chop up the Onions and the Celery, sprinkle them with salt and pepper, mix up, then place in the Turkey cavity.

Chop up the stick of butter into small pieces, and place bits under the turkey breast skin, between the wings and the legs. Leave some butter on top of the Turkey Breast.

Sprinkle a little Olive Oil over the Turkey

Place dressed Turkey in Convection Oven on 325°F
- 14
Cook Turkey for 2.5 hours then bast the turkey with the juices every 15 minutes until done
