Ingredients

  1. 200 grams(gluten free) plain white flour
  2. 2 tspbaking powder
  3. 1/2 tspbicarbonate of soda
  4. 1/2 tspxantham gum
  5. 1 tspground cinnamon
  6. 1 tspground ginger
  7. 1/2 tspmixed spice
  8. 1zest of 1 orange
  9. 3 tbspmilk
  10. 100 gramsground almonds
  11. 150 gramslight muscavado sugar
  12. 225 gramsgrated parsnip
  13. 1grated apple
  14. 30 gramsraisins
  15. 3eggs
  16. 150 mlvegetable oil

Cooking Instructions

    Preheat the oven to 180 Celsius, line and grease a 23cm tin

  2. 2

    Mix together the flour, raising agents, spices and almonds

  3. 3

    Stir in the sugar, parsnip, apple, orange zest and raisins

  4. 4

    Beat together the eggs, oil and milk

  5. 5

    Mix everything together

  6. 6

    Bake for 40 to 45 minutes. Nice with cream cheese icing on the top!
