Ingredients

  • 180 gramsbaking flour
  • 180 gramssugar
  • 200 gramscoconut, grated
  • 60 gramsbutter
  • 15 gramsbaking powder
  • 150 mlwarm fresh milk
  • 1egg
  • 1grated rind of 1 lemon
  • 1icing sugar

    Sift dry ingredients together. Cream butter, adding sugar gradually, creaming well. Add unbeaten egg. Combine warm milk and grated rind of lemon.

    Add alternately with the dry ingredients to creamed mixture. Blend well after each addition. Fold in grated coconut, mixing thoroughly until well blended.

    Pour into a loaf tin, well greased. Bake at 180°C for 45 minutes. Cool. Cover with icing sugar, if desired.
