Ingredients

4 servings
  • 1 tbspvegetable oil
  • 1 smallred onion diced
  • 1 mediumred bell pepper, seeded and diced
  • 3 cupcorn kernels or 5 medium ears off corn sliced from the cob
  • 2 tsplime juice
  • 1salt to taste
  • 1pepper to taste
  • 3 tbspminced fresh cilantro
  • 1 tspchopped canned chipotle chile in adobo sauce

Steps

  1. 1

    Heat oil in a large skillet over medium high heat until hot but not smoking.

  2. 2

    Add onion and cook until softened and browned around the edges, about 3 minutes.

  3. 3

    Add red pepper and cook until softened, about 1 minute.

  4. 4

    Add corn and cook until deep yellow and softened, about 2 minutes.

  5. 5

    Off heat, stir in chipotle, cilantro, lime juice, salt and pepper.

  6. 6

    Serve.

  7. 7

    *This goes really nicely with fajitas.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
