This weekend I learnt how to make mandazi for a large number of people while using very little ingredients. It was helpful and cheaper than I expected.

This weekend I learnt how to make mandazi for a large number of people while using very little ingredients. It was helpful and cheaper than I expected.
Steps

Use 2½pkts of flour place in a bucket or a very large bowl

Add the baking powder and sugar and mix very well. Add 500ml cooking oil in the mix.

Start adding water as you knead the dough.

Add water slowly as you are kneading until all flour is mixed with the dough.

Continue kneading for around 10minutes then cover with cling film them remove and place dough on a clean surface/table

Take a quarter or half depending on size and roll until flat

Start cutting into different shapes and sizes using a knife because it is faster

As you are cutting place at least 1½l cooking oil in a sufuria and turn heat to maximum for oil to boil until sizzling hot

To test whether the oil is ready drop a small piece of dough in the oil and if it start cooking and floats then you know that the dough is ready.

Start placing the cut up dough in the sufuria. It will be a fast process since there is a lot of heat.

Overturn each and every one so that both sides cook

Then remove using a serrated spoon and continue until you finish all and if the oil is too hot turn heat to medium.
