Ingredients

  1. 12Hard Boiled Eggs, shells removed and cut in half and yolks removed to a bowl.Whites reserved.
  2. 1/3 cupmayonnaise
  3. 2 tspdijon mustard, or mustard you like
  4. 2 tbspminced cooked ham, I used black forrest ham
  5. 1 tsplemon juice
  6. 1 tbspminced celery
  7. 1 tsphot sauce, I used franks red hot
  8. 1/2 tspblack pepper
  9. 1 dashsalt, to taste depending how salty your ham is
  10. 1 bunchchives

Cooking Instructions

30 mins
  1. 1

    Mash egg yolks with all ingredients EXCEPT reserved egg whites and chives until smooth. Fill egg white halfs with yolk mixture. Cut chives to look like football stitching, one straight piece and three short ones across the long one so each egg looks like a football.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
