Stacked Imagawa Cake
My father loves this. Nichirei brand makes a frozen Imagawa cake but they were sold out and I happened to have some red bean paste, so I made this myself. Since I like it better with a very small amount of red bean paste, I made this recipe so that it could be adjusted.This uses large round bottomless cake rings, so keep the size of the molds in mind and don't fill them up too much. Once they plump up, flip them over. (Test by eye: when the raw parts of the batter begin to hold together, it's ready to be flipped.) The baking soda creates a nice browned color, and the baking powder helps them plump up. Recipe by happyaiko

Fig Jam
My family is separated into those who eat figs plain and those who like them as a jam, but only a few of us like them plain so they go bad fairly quickly. This is why I made them into a jam that can be stored.The amount of sugar will depend on the sweetness of the figs, so adjust as needed. Ripe figs are pretty sweet, so please add more lemon juice. In Step 4, be careful not to let it boil down too much. Recipe by Nu-shi. (Uses 1 pack of 5 small figs.)

Figs are in season, so I decided to make jam out of them!Adjust the amount of sugar to your liking – you could decrease the amount if you want, but if you plan on keeping the jam for a long time be sure to use an amount of sugar that's over 50% of the weight of the figs.
