I love mushrooms and wanted an excuse to cook them.
Steps

Chop up the onion, garlic and mushrooms. Add the onions and garlic to a pan with olive oil and heat until soft.

Add the chopped mushrooms and heat for a further 1 minute.

Add the water, couscous and spinach and allow to come to the boil.
- 4
Remove from the heat and cover with a lid for 5 minutes.
- 5
Fluff up with a fork and spoon in your soft cheese.
