Ingredients

  1. 1orange, zest &juiced
  2. 1/2 cupdried cranberries
  3. 1egg
  4. 1/4 cuphoney
  5. 2 cupsflour (any type)
  6. 1 cuprolled or whole oats, grounded
  7. 1/2 teaspoonvanilla extract

Steps

    Preheat oven to 400° F

  2. 2

    Line cookie sheets with parchment paper.

  3. 3

    In a blender or food processor, grind rolled or whole oats for 11seconds

  4. 4

    Combine flour and oats in bowl and set aside.

  5. 5

    Dice dried cranberries into smaller pieces add to dry mixtureAdd egg, vanilla extract and honey to bowl and mix well

  6. 6

    Grate or zest the orange peel, and add to mixture.

  7. 7

    Slice orange in half.

  8. 8

     Squeeze juice into bowl,don’t worry if pulp gets into the dough, however, if any seeds fall in, remove them before baking.

  9. 9

    Knead dough into ball.

  10. 10

    Split the doughinto 4 or five smaller balls.

  11. 11

     Roll each ball onto a flat countertop covered with parchment paper and roll to ¼ to ½ inch thickness

  12. 12

    Place in oven and bake for 10 to 12 minutes.

  13. 13

    Air tight container or bag and keep in refrigerator or freezer until needed.
