I created this recipe when trying to use less white sugar in my baking. My boys love these! They're also good filled with nutella, cream cheese or whatever you can think of.

I created this recipe when trying to use less white sugar in my baking. My boys love these! They're also good filled with nutella, cream cheese or whatever you can think of.

Ingredients

  1. 1 1/2 cupself rising flour
  2. 1/2 cuppacked brown sugar
  3. 1 tspground cinnamon
  4. 1/2 tspground nutmeg
  5. 1/2 tspsalt
  6. 1 largeegg, lightly beaten
  7. 1/2 cupvegetable oil
  8. 1 cupmilk
  9. 1 tspvanilla extract
  10. 1strawberry or your favorite jam

Cooking Instructions

    Preheat oven to 400F, grease or line muffin tins. You'll need enough for 1 dozen muffins.

    In a large bowl, sift together the flour, sugar and cinnamon.

    In a small bowl, combine the egg, oil, vanilla and milk.

  4. 4

    Stir the liquid ingredients into the dry ingredients until just combined. Do not overmix.

  5. 5

    Fill each muffin cup with about 2 tbsp batter, add 1 tsp of jam in the center, and then another 2 tbsp batter on top of that.

    Bake for 20 minutes or until done.

    These are yummy warm or cold.
