Slice, peel and core apples.

In 8 quart crock pot add cider, brown sugar, and apple pie spice. Stir all ingredients together and add apples.

Cook on high for 8 hours, stirring occasionally. Take lid off, cook uncovered on high 3 hours stirring occasionally to reduce the cider down. Turn crock pot to low and simmer for 7 hours, still stirring occasionally. Look at it after and cook uncovered on high until it reduces to the consistency you desire.

Take a whisk to the mixture to blend it to the desired texture. Remove from the crock and put them into jars or desired serving bowls
