Ingredients

  1. 2fresh bamboo shoots, sliced
  2. 300 gramspork belly, skin removed
  3. 2 sprigsbasil leaves
  4. 3kaffir lime leaves
  5. 5red chilies
  6. 2 cupscoconut milk (500 ml)
  7. 2 tablespoonsred curry paste
  8. 2 tablespoonsfish sauce
  9. 1/2 tablespoonpalm sugar
  10. 1 tablespoonseasoning powder

    Slice the bamboo shoots into bite-sized pieces, soak in salt, boil in water, and drain to reduce bitterness.

    Add a little coconut milk and curry paste to a pan, cook until the coconut milk dries up, then gradually add more coconut milk, cooking until dry 2-3 times until the curry paste is fragrant and the coconut oil separates.

    Once fragrant and the oil separates, season with fish sauce, palm sugar, and seasoning powder. Adjust the taste as desired.
