Soft Chapati (Cold Water Knead)

If someone was to tell me that i could achieve soft chapatis using cold water, i would never believe it. Until i was taught of this recipe and i went ahead and tried it out! Let me just say, my fingers are thanking God for deliverance from hot water :-)

In a bowl, pour your flour add salt and mix well, then add the oil/fat and give it a good mix till its crumbly/soft. Oil has to mix well with the flour. No lumps.

Start adding the water by pouring half a cup to mix the flour, keep adding the water as you knead till you form a soft pliable dough about 10 mins of kneading - dont be in a rush.

Cut 4-5 balls then roll each into a circle and smear your oil/fat all over it.

Split the circle into two and and roll each separate to form chapati balls aka "tabakis" :-) do the same with all the balls and set aside for about 30mins.

Heat your pan/ skillet/ tawa - start rolling out your chapatis from the tabakis and put them on the pan let it cook on one side then flip to the other side, apply oil on the cooked side and turn so you cook on the other side. Repeat for all.

Chapatis are ready to serve! Enjoy!
