A special recipe I made for the holiday, and my guests were amazed by it.
Steps

In a blender, combine 1 cup of chickpeas with the cooked, chopped beet. Blend until smooth. Add tahini, a little lemon juice, salt, and a bit of water. Blend again, then taste and adjust seasoning as needed. Set aside.

Repeat the same process, but add avocado instead of beet.

Place each mixture in a piping bag and serve in unique molds or dishes as shown in the picture. Enjoy!
