Fried chicken in palm oil stew

Boil the chicken with salt, onions and seasoning and fry with veg oil and set aside

Blend the tomatoes, pepper and shombo with little garlic and ginger and boil for the water to dry. Put palm oil in a dry pot on a low medium heat and allow the oil to heat don't bleach the oil. Add sliced onions and the dried tomato paste. Fry to your taste add the chicken stock and adjust the salt and seasoning if need be. Add the fried chicken and cover it to boil.

Your stew is ready. It can be served with boiled yam or white rice.
