Ingredients

  1. 3/4 cupButter (12 Tbls)
  2. 1 (8 oz)package cream cheese, softened
  3. 2 cupssugar
  4. 2Large eggs
  5. 3 cupsall-purpose flour
  6. 1/2 teaspoonbaking powder
  7. 1/2 teaspoonbaking soda
  8. 1/2 teaspoonsalt
  9. 1-1/2 cupsmashed bananas (1 1/4 pounds unpeeled bananas, about 4 medium)
  10. 1 cupchopped pecans or walnuts, toasted
  11. 1/2 teaspoonVanilla

Steps

  1. 1

    Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans, and cool completely on wire racks

  2. 2

    Beat butter and cream-cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, 1 at a time, beating just until blended after each addition.

  3. 3

    Combine flour and next 3 ingredients; gradually add to butter mixture. Beating at low speed just until blended. Stir in bananas, nuts and Vanilla.

  4. 4

    Spoon evenly in to 24 paper lined muffin cups.

  5. 5

    Cool in pan 10 minutes, remove from pans, and cool completely on wire racks.
