Steps

Wash and slice the eggplants into round shape

Apply lemon juice, salt and 1/2 tsp red chilli powder and all Masala and flour on the slices and mix wellIn a big bowl, add all the ingredients except eggplant slices and oil. Mix water so all masala mix and stick with brinjal slices

Now, heat oil in a deep and wide pan Or kadai over high flame.When oil become medium hot then dip the eggplant slices gently drop in the oil.

After a minute, gently and carefully flip the brinjal slices and let them cook from the other side When sliced become crisp and golden then take out from the pan or kadai with a slotted spoon. Place on a paper napkin to remove the excess oil.

Sprinkle chaat masala and little red chilli powder on top.
Garnish with coriander leaves and carrot slices.serve hot.
