I love Methi/Fenugreek in every form and while making low carb recipes i tried my hands on this delicious, low carb, high protien dish. It can be served with roti or rice.

Ingredients

  1. 2 Cups: Fresh fenugreek leaves
  2. 1 Cup: Tomato Pureed
  3. 1 tbsp: Garlic ginger chilli paste
  4. 1 tsp: salt
  5. 1/2 cup: Green Peas
  6. 1/2 Cup: Paneer/Tofu Cubed
  7. 1 tbsp: Ghee/Clarified Butter
  8. 1 tsp: red chilli powder
  9. 1/4 tsp: Turmeric Powder
  10. 1 tsp: Coriander Powder
  11. 1/4 tsp: Garam Masala

Cooking Instructions

    In a non stick pan, add ghee, roast the tofu/Paneer cubes untill light golden from outside.

    Now in leftover ghee, add ginger garlic paste, green chillies and saute well.

    Add tomato pureed and cook untill ghee seperates pan.

  4. 4

    Now add finely chopped/pureed fenugreek leaves and mix well.

  5. 5

    Add salt and green peas and cover to cook.

  6. 6

    Add dry spices and 1/2 cup water and cook with the lid on until gravy is cooked well and ghee comes on top.

    Now pour the gravy in serving dish and put cubed paneer/tofu on top.

    You can also add fresh cream to lighten the flavours. I havent added to keep it low fat and it was absolutely delicious.
