Egg Foo Yong / Fu Yung Hai

I grow up eating tons of egg foo yo(you)ng because my late father loved it so much. You can use meat, veggies, or even tofu for this dish. We love to eat this with thickened sweet and sour sauce. It brings good memories and laughter of days gone by.
Whenever I have plenty of spring onions, I usually make this dish. I am thankful because my family eats pretty much what I cook. They are not picky (okay, maybe on certain items, but we all have our own preferences), luckily! And we all love this dish. I'm quite sure they won't complain if I cook this seven days in a row.
This recipe yields about 8-10 egg foo yong (I used 15 cm pan for this).

Cooking Instructions

Combine all ingredients and mix well.

Heat oil in a pan, medium heat. Spread the mixture evenly and wait until the bottom part becomes brownish and a bit hard.

Flip and wait until both sides are cooked. Serve with sweet and sour sauce (I'll add the recipe later).

It's great for bento, too!

I've searched many Egg Foo Yung recipes and combined ingredients and methods to derive this chicken recipe. I LOVE Egg Foo Yung and I think this recipe stacks up against order-out recipes. (1 cup of diced shrimp can be substituted for chicken for a delicious Shrimp Egg Foo Yung.)(Great Value ingredients are the Walmart brand.)Recipe makes about 10-11 patties (5-6 inches each). I fry 1 pattie at a time in a small fry pan but more patties can be fried at a time with a large fry pan. Oil in pan should be about 1/8 in thick. eaesch -

Ever since I was a child, I liked to putter around in the kitchen. Sometimes I watched my late mom cooking. Most of the time she asked me to do this and that. I can still hear her voice telling me to peel or chop something. Growing up, I was blessed with a warm family and a home full of delicious dishes. My mother was always cooking something. When I think about egg sandwiches, nothing compares to the sweetness of this one. The salty mayonnaise and boiled egg kind of sandwich is also good, but please give this sweet mayonnaise and scrambled egg sandwich a try. It's a taste you just can't get enough of!!!The sweetness is to taste, but I think it's the tastiest when it's on the sweet side. Be careful not to burn the eggs, even though it's a bit more aromatic that way. I recommend using soft bread rather than hard.
