Steps

Clean the brinjal and apply some oil over it.

Cut length wise and check whether the brinjal is all ok from inside.

Start roasting it on low flame from all the sides. Transfer it into cold water once roasted from all the sides.

Peel the brinjal.

In a mixer jar roughly grind the roasted brinjal.

In a kadhai heat oil add cumin seeds, green chilli ginger and cook for 1 minute.

Saute and add onions, cook well then add tomatoes.

Cook well.

Once tomatoes are also cooked well add the roasted grinded brinjal. Add the spices and mix well. Cover with the lid and cook for 5 minutes. Lastly add lemon juice.

Baigan ka bharta is ready to eat. Serve it hot. I served with slices of onions, tomatoes and cucumber. Garnish with coriander leaves.
