Poha is a healthy Maharashtrian breakfast dish which is vastly popular in most Northern & Western states of India. Add to this that it is easy to make and tasty and you have a winner on your hands!
Steps

Take poha in a strainer. Wash under running water and keep aside

Heat oil in a pan. Add mustard seeds, cumin seeds, green chilies curry leaves and peanuts. Stir till chillies are crisp.

Add chopped onions, saute till golden brown. Add potatoes mix well.

Add turmeric powder when potatoes go soft. Mix well and cook for a minute.

Add the poha. Mix and cook for 2- 3 minutes

For finishing touches add a few drops of lemon juice and garnish with finely chopped coriander leaves. Your poha is ready to serve!
