Ingredients

  1. Pork (you can use pork belly but thinly sliced)
  2. 4red and green chillies (cut into long thin slices)
  3. 5garlic gloves (minced)
  4. 3 inchesginger (lightly chopped, not too minced)
  5. 4 stalksspring onions (cut in 2 inches long)
  6. 2 tbspcooking wine
  7. 2bell pepper (cut thinly)

Steps

  1. 1

    Marinate the pork for 30 mins with salt. Optional.

  2. 2

    In a cast iron pan, add a tbsp of oil, add garlic and ginger till 50% cooked.. Set aside for later use.

  3. 3

    On high heat, add pork, sprinkle salt on top. Stir fry until light brown. Cook in two batches if necessary, do not crowd the pan too much.

  4. 4

    Add chilies and white part of spring onions in.

  5. 5

    Add cooking wine(optional). continue cooking until pork is well done.

  6. 6

    Add ginger and salt and spring onions.

  7. 7

    Add cut peppers and green part of spring onions in. Stir fry for a min then serve.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
