Ingredients

  • 150 gsmall pasta hoops
  • 1courgette, chopped
  • 1onion, grated
  • 1carrot, peeled and grated
  • 1 canchopped tomatoes
  • 2garlic cloves, minced
  • 1 tbspdried wild oregano
  • 1 tbspdried parsley
  • 1 tspdried basil
  • 1 tbspsugar
  • 2 tbspketchup
  • Parmesan cheese, grated for topping
  • 2 tbspolive oil
  • 1reduced salt chicken or vegetable stock cube
  • 100 mlwater

Steps

  1. 1

    Heat the olive oil over a medium-high heat.

  2. 2

    Add the onions and fry until soft. Add the garlic and fry for a further minute.

  3. 3

    Add the tomatoes, ketchup, herbs and sugar. Cook for a further 4-5 minute.

  4. 4

    Add the carrot and courgette. Stir and cook for another few minutes.

  5. 5

    Add the water and reduce heat. Allow to simmer for 20 minutes. Stir occasionally.

  6. 6

    Cook pasta according to packet instructions. Once cooked drain and add to the vegetable sauce. Stir well together.

  7. 7

    Transfer to a plate and sprinkle with grated parmesan.
