Egg Fried Rice Indian Style

Why do I say Egg Fried Rice Indian Style? Because the authentic Chinese is nothing close to what we make in India. We eat rice every day and there is leftover rice many a time and what better way to use it again. Chinese fried rice is made with slightly uncooked rice, placed in the refrigerator for a few hours as it gives you a rice dish with every grain of rice intact hence non-sticky.
There are two ways of making egg fried rice; one is to scramble the eggs with the veggies and another is to make a thick omelette, cut strips and garnish the fried rice with it. I make both but today I am sharing the recipe for the first method. We Punjabis love pepper and use it in most dishes. I sprinkle it on the fried rice too It is proved that black pepper stimulates the taste buds in such a way that an alert is sent to the stomach to increase hydrochloric acid secretion, thereby improving digestion. It is safe and can be given to infants too.

  2. 2

You can add green peas too if you like. Add the salt, vinegar, soy sauce and the rice. The vinegar gives a nice tangy taste and the veggies too, retain their colour because of it. Mix well till rice is nice and hot. Garnish with spring onion and serve
