Steps

Defrost snoek and rinse

Season snoek with fish masala and sprinkle with salt and let rest for an hour.

Place seasoned snoek on a hinged braai grid and top with sliced pepper and onions

On the stove, heat up basting ingredients - butter, garlic, apricot jam on high

Braai snoek on low coals and baste regularly

Once edges are golden, add cheese.

Wait till cheese is melted and serve
