Baked Tamarind Chipotle Chicken Wings

This recipe is perfect for a small celebration or a casual get-together with friends. The original recipe is from my friend Ángel fnd, but I changed some ingredients to try something new.

This recipe is perfect for a small celebration or a casual get-together with friends. The original recipe is from my friend Ángel fnd, but I changed some ingredients to try something new.

Wash the chicken wings thoroughly. If needed, use the flame from your stove to burn off any remaining feathers or hairs.

In a bowl, mix the wings with 1 teaspoon salt, 1 tablespoon ground black pepper, and 1 teaspoon garlic powder. Let them marinate for about 1 hour.

Line a baking sheet with aluminum foil and arrange the chicken wings on it. Bake at 350°F (180°C) for 20 minutes. Remove from the oven, flip the wings, and bake for another 30 minutes to ensure even cooking.

While the wings are baking, add 1 cup tamarind concentrate to a blender.

Add 1/4 cup brown sugar.

Add 1/2 cup water.

Add 1/4 cup soy sauce.

Add 2 canned chipotle peppers.

Blend everything together until smooth.

Pour the mixture into a skillet and cook over medium heat, stirring constantly. The sauce will bubble and may splatter, so keep stirring. After it comes to a boil, continue to cook and stir over low heat until it thickens to a creamy consistency.

Once the wings are done baking, remove them from the oven and coat them with the tamarind sauce. Return the wings to the oven and bake for another 10 minutes.

After that, the wings are ready to serve. You can enjoy them with a cold beer, some veggies, and your favorite dressing.
