Veggie Sausage Breakfast Fry Up

Low carb breakfasts can be a challenge when you don’t eat eggs or dairy, but this dish was really tasty. I sprinkled some dried chilli flakes on at the end and they were a good edition to really wake the taste buds up! I used tofurkey sausages but you could of course use whatever sausages you like. Tofurkey sausages are already cooked and just need slicing, if you sub normal sausages make sure they are cooked first! 😊

Fry the courgettes in a little oil for about 5 mins until softening and starting to colour. Sprinkle with paprika, And black pepper then add your tomatoes and sausage slices to the mix.

Fry for another 5 minutes then serve topped with your almonds, chilli flakes and a good twist of freshly ground rock salt
