Ingredients: 3 chicken breasts, cubes; 2 carrots, small cubes; 1 medium onion, diced; 1 red pepper, cubes; 2 garlic cloves, chopped; 2 sticks celery, chopped; 1/2 tin chopped tomato; 100 ml creme fraiche; Olive oil; Tiiiny bit of ginger, grated; Handful cashew nuts; Salt and black pepper; 1 cube veg stock; 1 cube chicken stock; Paprika; All spice; 1 little bit of sriracha flakes; Cinnamon; White pepper; Tiiiiny bit of turmeric; White basmati rice

Ingredients

3chicken breasts, cubes
2carrots, small cubes
1medium onion, diced
1red pepper, cubes
2garlic cloves, chopped
2 stickscelery, chopped
1/2 tinchopped tomato
100 mlcreme fraiche
Olive oil
Tiiiny bit of ginger, grated
Handfulcashew nuts
Salt and black pepper
Spice mix (sprinkle of each)
1 cubeveg stock
1 cubechicken stock
Paprika
All spice
1little bit of sriracha flakes
Cinnamon
White pepper
Tiiiiny bit of turmeric
On the side:
White basmati rice

These were the vegetables I had in the fridge and they were about to expire

Start with frying the onion in olive oil for 5 min

Add the carrots,celery, and pepper, sprinkle a pinch of salt and mix for 5 more minutes

When the vegs are soft add the chicken, mix a bit, then add the garlic and mix again

Add the spice to the chicken and stir until everything is mixed together

When the chicken is almost cooked, add the chopped tomato, mix... then add the creme fraiche.

Bring the mixture to the boil, add the cashew nuts and then simmer for 10 min

You don’t have to stick to my recipe. Just add whatever you have in the fridge and mix them with any spices you love and you’ll have a great dish on your table! Bon appétit 👋
