Ingredients

5 servings
  • 3 cupslong grain rice
  • 2 cupschicken stock
  • 2 table spoonfried rice spice
  • 2 table spooncurry powder
  • 1/2 table spoonturmeric powder
  • 300 gramscooking butter
  • 2 cupsdiced carrots (pre cooked)
  • 1 cuppeas (pre cooked)
  • 1/2 cupsweet corn (optional)
  • 3 spoon(crushed habanero peppers)
  • 2 table spooncooking oil
  • 1/2 spoonblack pepper powder
  • to tasteSalt and seasoning
  • For the chicken
  • 1whole chicken cut, and precooked with salt seasoning, onions, ginger and garlic
  • 4 table spooncrushed habanero peppers
  • 2large onions, sliced
  • Chicken spice powder
  • 1/2 cupsspring onions
  • 3 cupsvegetable oil for frying
  • 1 table spooncurry powder
  • to tasteSalt and seasoning

Steps

  1. 1

    Wash and soak the rice in water for at least an hour

  2. 2

    Per boil the rice in plain water to 20% done, turn off the heat and drain

  3. 3

    Heat up the chicken stock in a pot, add the fried rice spice. Divide the salt and seasoning into two halves and add one portion of it to the stock and bring it to a boiling point.

  4. 4

    Add the semi cooked rice to the stock, and cook to 90% done, until all the stock is completely dried up.

  5. 5

    Place your non stick pan and turn on the heat. Add the cooking butter, cooking oil, and a let it dissolve

  6. 6

    Add the vegetables, and crushed pepper and stir fry for about two minutes

  7. 7

    Add the spices mentioned above and finally the pre cooked rice

  8. 8

    Add the remaining seasoning and stir fry for 3 more minutes or until its fully cooked.

  9. 9

    Note that you can do the last step in batches, so that the rice can be fried fully.

    For the chicken

    Heat the oil in a pan and semi fry the chicken, to sunrise color

  12. 12

    Place 1/2 cup of oil in a pan

  13. 13

    Add the habanero peppers, spring onions, and seasoning to taste

  14. 14

    Add your semi fried chicken, and toss throughly

  15. 15

    Add the onions, curry and chicken seasoning mix

  16. 16

    Toss for about 1 minute and turn off the heat

  17. 17

    Serve with the fried rice
