What made it special and different from the usual fried rice is that, I cooked the rice in chicken stock first, instead of the normal per boiling tradition, and I promise you the taste is more richer 😋

What made it special and different from the usual fried rice is that, I cooked the rice in chicken stock first, instead of the normal per boiling tradition, and I promise you the taste is more richer 😋
Steps

Wash and soak the rice in water for at least an hour

Per boil the rice in plain water to 20% done, turn off the heat and drain

Heat up the chicken stock in a pot, add the fried rice spice. Divide the salt and seasoning into two halves and add one portion of it to the stock and bring it to a boiling point.

Add the semi cooked rice to the stock, and cook to 90% done, until all the stock is completely dried up.

Place your non stick pan and turn on the heat. Add the cooking butter, cooking oil, and a let it dissolve

Add the vegetables, and crushed pepper and stir fry for about two minutes

Add the spices mentioned above and finally the pre cooked rice

Add the remaining seasoning and stir fry for 3 more minutes or until its fully cooked.

Note that you can do the last step in batches, so that the rice can be fried fully.

For the chicken

Heat the oil in a pan and semi fry the chicken, to sunrise color

Place 1/2 cup of oil in a pan

Add the habanero peppers, spring onions, and seasoning to taste

Add your semi fried chicken, and toss throughly

Add the onions, curry and chicken seasoning mix

Toss for about 1 minute and turn off the heat

Serve with the fried rice
