Ingredients

  • 3 cupsleft over mashed potato
  • 1/2 cupshredded cheese (anything you have on hand)
  • 1 cupseasoned panko crumbs plus more to coat each croquette
  • 2beaten eggs
  • Butter

Steps

  1. 1

    Melt butter in a pan on medium-low heat

  2. 2

    Mix all other ingredients, leaving plenty of crumbs for coating

  3. 3

    Coat each in crumbs and flatten

    Cook on each side several minutes until golden and crisp

  5. 5

    Add more butter to pan as needed
