Ingredients

  • 2.5 cupsflour
  • 2 tbspsugar
  • 1 tbspbaking powder
  • 0.5 cupapplesauce
  • .666 cupmilk
  • 1egg
  • 1 tspvanilla
  • 2 cupsfrozen blueberries or whatever you want in the scones

Steps

  1. 1

    Throw everything except the blueberries in a mixer.

  2. 2

    Mix with dough hook lightly: you want it lumpy

  3. 3

    Add blueberries once the mixture is lumpy, and lightly mix once more

    Pour into scone moulds, or cut into 8 equal pieces on parchment paper if you don't have one

    Cook at 400 degrees Fahrenheit for 25 minutes. I find the scone moulds take longer, adjust accordingly.

I recently tried this substituting Sourdough starter for all of the milk and some of the flour - turned out great! They were lighter and fluffier, with the tops not at crispy.If you do this, remove the milk from the recipe and reduce the flour by 2/3 of a cup, and add 4/3 of a cup of Sourdough starter.I found I needed to bake for an extra 10 minutes or things turn out doughy though.
