I remember growing up and my mum making these even though she was extremely busy. She always seemed to have time to make treats for us, be it homemade yogurt, candy from fruits, popcorn, you name it. My brother and i always ate the head first, then the arms and legs.... seemed to taste better that way :) Making these for my kids now brings back memories...

In a bowl, beat the butter and sugar until light and airy (fluffy), add the egg and mix.

Add the baking powder, salt, cinnamon and ginger into the sifted flour. Mix or sift them together to make sure it's well incorporated.

Mix both wet and dry ingredients together to for a dough then wrap in cling film or nylon bag and refrigerate for about an hour. (You can toss it in the freezer for 30 minutes if u r in a hurry).

Take it out of the bag and divide into 3 workable portions. Knead briefly and roll out flat to about 1/4 of an inch thick. Use your cutters to cut out the shapes. You can alternate with smaller cutters to make Ginger Bread Boys as well.

Bake in a preheated oven for about 10 minutes or until golden brown. Bring out to cool before serving. Dont worry if they seem a little soft, it will harden up to a lovely crisp cookie once its cooled down.
