Preheat the oven to 400°F (200°C).

Slice the garlic cloves and place them on top of the cleaned monkfish tail. Set aside.

Peel and slice the potatoes, then slice the zucchini and onion. Arrange them in a baking dish with salt, olive oil, and half the white wine. Bake for 15 minutes.

Once the vegetables are halfway cooked, remove the garlic slices from the monkfish tail. Place the monkfish in the baking dish with the vegetables, add the remaining wine, and bake for 30 minutes.

While the monkfish is baking, heat olive oil in a skillet and sauté the sliced garlic until golden. Remove from heat, add a tablespoon of paprika, and mix well.

When the monkfish is done, pour the paprika and garlic oil over the top, sprinkle with flake sea salt, and serve.
