Pound the cilantro roots, garlic, and black pepper together until fine. Add a little oil and sauté the mixture until fragrant. Add the ground pork and shiitake mushrooms, then season with oyster sauce, soy sauce, and brown sugar. Add the carrot, shrimp, glass noodles, and bean sprouts. Taste and adjust seasoning if needed. Add green onions, cook briefly, then set aside to cool.

Wrap the filling with spring roll wrappers (use frozen spring roll wrappers or cotton candy wrappers if available).

When frying, use plenty of oil and medium heat. Serve with plum sauce for dipping.
