Tex-Mex inspired brisket chili

Ingredients

  1. 1 cupchopped poblano peppers
  2. 1-4chopped serrano peppers (depending on the desired heat)
  3. 1small white onion, chopped
  4. 3 clovesgarlic
  5. 1 tbspbutter
  6. 1 cupchicken stock
  7. 1 cupbeer (I prefer dark beer like Modelo Negro or similar)
  8. 2 tspcumin
  9. 1.5 tbspchili powder
  10. 1/2 tspblack pepper
  11. to tasteSalt
  12. 1 lbsmoked brisket, chopped
  13. Juice from half of a lime
  14. 1 (15 oz)can crushed tomatoes
  15. 1 (15 oz)can pinto beans, drained
  16. 2 tspcorn flour or masa flour
  17. Garnish (Optional)
  18. Monterey-Jack cheese
  19. Sour cream
  20. Chopped cilantro
  21. Pico de gallo
  22. Lime wedges
  23. stripsFried corn tortillas

Cooking Instructions

  1. 1

    Heat butter over medium heat in a 6 quart pot and add the onion, peppers and garlic. Cook for around 5 minutes, stirring often.

    Add the beer, chicken stock, dry spices, lime juice, brisket, tomatoes and beans. Stir in the corn flower and let simmer for 20 minutes.

    Ladle into bowls and garnish as desired.
