Cooking Instructions

In a blender, grind the almonds very well with the sugar and 75 g of the egg whites until it becomes a relatively thick paste, blending for a good amount of time.

Transfer the paste to a mixer and using the paddle attachment, beat the paste with the remaining 145 g of egg whites until it becomes a fluffy, smooth cream.

Preheat the oven to 350°F, line a baking sheet with parchment paper, fill a piping bag, and pipe any shape you like onto the parchment paper, leaving space between them as they spread. Then sprinkle generously with the sliced almonds and bake for 20 minutes or until they are golden brown. Be careful not to overbake; they should have a crust on the outside and be soft inside.

We have been trying somewhat to keep up the Christmas Spirit, but it has been very hard these past few days. With my mom visiting we went into the kitchen and starting making Kourambiedes (Greek Almond Cookies) it would take our minds off of things and just concentrate on cooking. I love cooking and besides this being my passion it has also been a real help to me whenever I was upset or stressed out, and this is one of those times.I am a huge fan of Vintage pieces and I remembered that my mom had this star dish that was my grandmother’s and is about 100 years old. I find it to be beautiful and this is why I took a photo of this cookie in this dish.
