Masala Mathri.. A crispy, flaky, deep fried tea time snack made using wheat flour, all purpose flour, chickpea flour, semolina, clarified butter and some spices. This melt in mouth perfect snack prepared during Diwali

Heat a pan on low heat. Dry roast black pepper, cloves, coriander seeds, cumin seeds and fennel seeds for 1 minute and grind it into a coarse powder. Keep it aside.

Now in a big mixing bowl take wheat flour, all purpose flour, gram flour, semolina, salt, ground spices, caraway seeds, carom seeds, kasuri methi and ghee.

Mix everything properly and rub this mixture between your palms till it looks like breadcrumbs.

Add water and bring the dough together. Do not knead the dough, just bring it together. It should be stiff. Cover and keep it aside for 15 minutes.

Pinch a small portion of dough. Shape it into a ball and press with light hands between your palms.

Make all the mathris likewise. Prick them with a fork. Heat oil in a wok on low medium flame.

Fry the mathris from both sides till crisp and golden brown.

Take the mathris out and let them cool down completely.

Enjoy these crispy and flaky mathris with tea.
