Perboil your rice with tumeric, drain water and set aside. Heat small amount of oil in a pot and fry the onions, crack in egg stir fry for 2mins. Add carrots, oinon spring, garlic and pinch of salt and stir fry until well combined. Add your rice and stir well.

Add chicken in a pot add garrlic, ginger, seasonings and allow to cook till tender. Deep fry the chicken in a hot oil frying pan till golden brown and set aside. Blend your tomatoes, onions, scotch bonnet and pepper, pour into another pot cook until no water left. Add oil and stir fry it. Add the chicken broth, add the fried chicken seasoning and let it boil for 3-5 mins.
