These might be my favorite tacos ever! Sweet and savory with a spicy kick.

Ingredients

4 servings
  1. 1 lbcooked pulled pork
  2. 1 cupchopped pineapple
  3. (16) 4"to 5" corn tortillas
  4. Sauce
  5. 1/2 cupplain yogurt
  6. 1/4 cuppeach preserves
  7. 1 tbsphabanero hot sauce
  8. Slaw
  9. 1/2Green cabbage, finely shredded
  10. 1/2 cupcarrot tops (or cilantro), chopped
  11. 1small purple onion, finely sliced
  12. 3 tspapple cider vinegar
  13. 3 tspsherry or dry white wine
  14. 1 tspolive oil
  15. 2 tsphoney
  16. 1 tspkosher or sea salt
  17. Optional Garnish
  18. Avocado
  19. Carrot tops (or cilantro), chopped
  20. Tajin fruit seasoning (in the Mexican isle at most grocers)

Cooking Instructions

    Start by assembling the slaw in a mixing bowl, and set aside to marinate.

    Mix the sauce ingredients together in a small bowl.

  3. 3

    Combine the cooked pork with the pineapple.

  4. 4

    Lightly oil a comal or a skillet and preheat on medium. Warm the tortillas for 10 to 20 seconds each side and transfer to a warmer. Add oil to the pan as needed.

    Assemble the tacos, starting with the pineapple pork mixture, then the slaw, then top with sauce and garnish.
