
Spanish style steak and fries

Cooking Instructions

Bake fries: preheat oven to 450 rinse all produce half potatoes length flies cut lengthwise into quarter inch slices then cut lengthwise again in two quarter inch fries. On baking sheet tossed potatoes with spice mix a tablespoon and a half of olive oil half a teaspoon of salt and black pepper a range in a single layer and bake until brown 20 to 25 minutes

Preparing ingredients: while fries bake finally chopped parsley leaves and stems, strip thyme leaves discarding stems then mince. drain roasted red peppers and thinly slice. peel onion, halve and thinly slice. mince garlic

Sear steaks: Pat's steaks dry with paper towel and season all over with salt and pepper. Heat one tablespoon olive oil enlarge pan over medium high heat. When oil is shimmering, add steaks to pan and sear until brown on bottom, 3-5 minutes (steaks will finish cooking in next step)

Finish stakes: flipstakes, still over medium high heat, scattered around roasted red peppers and onion, and continue cooking until steaks are medium rare and vegetables are beginning to soften, 3-5 minutes.transfer states to a plate, set aside to rest, leaving peppers and onion in pan. Add garlic and half of herbs to pan still over medium high heat semicolon cook, sterling, until flavors have melted together 2 to 4 minutes more then remove pan from heat.

Finish peppers and make aioli: to pan with sauteed peppers and onions, still off heat, add sherry vinegar and 2 tbsp of olive oil and stir to combine. Season with fourth of a teaspoon of salt and black pepper to taste. In a small bowl stir mayonnaise, remaining herbs and black pepper to combine. Set herbed aioli aside for serving.

Plate your dinner! cut steaks against grain into quarter inch slices. Divide peppers and onion amongst serving plates and top was steak. Spread herbed aioli on plates or on the side for dipping- serve the Spanish style steak fries and enjoy yourself!
