My Grandma used to prepare bimbli pickle in her own style with white masala. After her, my mom prepares exactly the same way she prepared. Whoever tastes it, the taste lasts in their heart and mind for years.

Ingredients

2 Jars
  • 1 kgBilimbi/Bimbli
  • 1/4 Cupoil
  • 2 tbspMustard seeds
  • 2 tbspcumin seeds
  • 2 tbsppepper corns
  • 1 CupWhole Green Chillies (about 25-30)
  • 1/2garlic pods
  • 50 gmsCurry leaves
  • 1/2 CupSugar (as required)
  • As required Salt
  • 1/4 CupVinegar (optional)

Steps

  1. 1

    Heat oil in a pan. Add Mustard seeds and fry till it pops.

  2. 2

    Add Cumin seeds and fry it for 3 mins.

  3. 3

    Then add pepper corns and again fry it for 3 mins.

  4. 4

    Add green chillies and fry till it changes it's colour.

  5. 5

    Add garlic pods and fry again till it's golden in colour.

  6. 6

    Now add curry leaves and fry again till it crisps.

  7. 7

    Then add Salt and sugar.. Mix well. Let in on a low flame for about 4 mins.turn off the stove and keep it aside. Let it cool completely

    Note: You can even refrigerate the masala for 1 month.

    Wash and wipe bimbli. Chop it into slices..

  10. 10

    Note: Bimbli should be fresh.

  11. 11

    Add it into above mixture.. mix well..

  12. 12

    Rest it for 2 hours.

  13. 13

    Now it's time to taste. Check if the sourness for bimbli is enough, if not, add vinegar and mix well.

  14. 14

    Rest it again for over night or for about 7-8 hours.

  15. 15

    Note: Rest the pickle in stainless steel/plastic vessels, or else it contaminates with other metal.

  16. 16

    Store it in a container and in cool temperature.

  17. 17

    Serve the delicious pickle with rice or chapati..
