Scallion pancakes ft. Lao Gan Ma fried chili in oil

Place flour in a large bowl; stir in boiling water until dough forms a ball. Turn onto a floured surface; knead until smooth and elastic, 4-6 minutes. Place in a large bowl

Mix in 4 teaspoons of sesame oil; 6 chopped green onions and 1 teaspoon of salt

Divide dough into 8 portions; roll each portion into an 8-in. circle; Flatten slightly (at this point you can wrap each pancake and freeze for storage)

In a large skillet, heat 1 tablespoon vegetable/canola oil. Over medium-high heat, cook 1 pancake at a time until golden brown, 2-3 minutes on each side.
