Slow Cooker Beef Round Roast

I'm thrilled with my birthday present. We're still getting to know each other, but wow! Even though the meat fell apart (we had enough shredded beef for some great macaroni), it turned out delicious. It was incredibly tender.

I'm thrilled with my birthday present. We're still getting to know each other, but wow! Even though the meat fell apart (we had enough shredded beef for some great macaroni), it turned out delicious. It was incredibly tender.

Peel and roughly chop the onion and carrot. Place them in the bottom of your slow cooker along with the bay leaf, cinnamon stick, bell pepper, and cherry tomatoes.

Season the beef roast well with salt and pepper. Sear it over high heat in a skillet. Once browned, place it in the slow cooker on top of the vegetables.

Pour the wine into the skillet you used to sear the meat and let it boil for a few minutes to deglaze the pan.

Pour the resulting liquid into the slow cooker, add the water, and cover.

Set the slow cooker to low for 7 hours (next time, I'll try just 5 hours) and let it cook on its own.
